Dip each chicken breast in the flour mixture to coat well (use your hands), then shake off any excess. Dip each piece in the buttermilk mixture to coat well (again using your hands), then coat with the bread crumb mixture. Place each chicken breast on a wire rack that's set over a baking sheet to catch any overflow; place in the refrigerator for at least 30 minutes or up to several hours before frying.    When ready to fry, add enough clarified butter or vegetable oil to cover the bottom of the skillet by 1/4 inch. Heat over medium-high heat until hot but not smoking. Add the chicken breasts and cook for 4 minutes per side or until golden brown and cooked through. Serve immediately with your favorite dipping sauce. Enjoy!
