Fried Spring Chicken: A Southern Classic

Few dishes conjure up images of the American South like fried chicken. This classic dish is simple to make, but requires some patience and finesse. The end result is crispy, juicy, and delicious - perfect for a family dinner or special occasion.

To start, you'll need a few simple ingredients: chicken breasts (skinless and boneless), all-purpose flour, salt, black pepper, cayenne pepper, paprika, eggs, milk, and canola oil or bacon fat.

First, season the chicken breasts with salt, black pepper, cayenne pepper, paprika, and garlic powder. Then set up your dredging station. Combine the all-purpose flour with salt, black pepper, and cayenne pepper in one shallow dish. In a separate shallow dish, whisk together the eggs and milk.

Dip each piece of chicken in the flour mixture until coated on all sides. Then dip it in the egg mixture until well coated. Let the excess egg mixture drip off before placing the chicken in a hot pan of oil or bacon fat.

Cook the chicken for about 4 minutes per side until golden brown and cooked through. Serve hot with your choice of dipping sauce - I love using my homemade remoulade sauce!

Fried Spring Chicken: A Tasty and Healthy Meal

Spring is a great time to enjoy fresh, locally grown produce. What better way to celebrate the season than by enjoying a fried chicken dinner? This dish is not only tasty and satisfying, but it's also surprisingly healthy.

Most people think of fried chicken as being unhealthy, but that doesn't have to be the case. When prepared using healthy ingredients and cooking methods, fried chicken can be a nutritious and wholesome meal. Here's how to make a delicious and healthful fried chicken dinner at home:

  • Start by choosing quality ingredients. For the chicken, opt for organic, pasture-raised poultry whenever possible. Use healthy cooking oils such as avocado oil or grapeseed oil for frying, and choose unrefined salt rather than processed table salt.

  • Next, prepare the marinade. Combine 1/4 cup olive oil, 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, and 1 teaspoon each of garlic powder and onion powder in a bowl or jar. Add the chicken breasts to the marinade, making sure they are well coated, then refrigerate for 30 minutes to an hour.

  • While the chicken is marinating, prepare the coating. In a shallow dish or bowl, combine 1/2 cup almond flour, 1/4 cup coconut flour, 1 teaspoon baking powder, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper. Stir well to combine.

  • After the chicken has marinated, remove it from the fridge and coat it in the almond flour mixture. Be sure to coat all sides evenly.

  • Heat up your chosen cooking oil in a large skillet over medium-high heat. When hot, add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through. Serve immediately with your choice of dipping sauce and some fresh spring vegetables on the side.

This easy fried chicken recipe is perfect for a weeknight dinner or special occasion meal. It's kid-friendly too - my kids love this dish! The best part is that it's both nutritious and delicious - perfect for those who want something tasty but don't want to sacrifice their health in the process
