1 whole chicken, cut into pieces

Instructions:

Preheat oven to 400 degrees F (200 degrees C).  In a shallow bowl, combine flour, salt, black pepper, and cayenne pepper.   Heat olive oil or vegetable oil in a large skillet over medium-high heat.   Coat chicken in the flour mixture, then place in the hot skillet.   Cook for about 4 minutes per side, or until golden brown.   Transfer chicken to a baking dish.  Bake for 20 minutes in the preheated oven.  Meanwhile, make the dipping sauce by combining sour cream, mayonnaise, parsley leaves, thyme leaves, garlic clove, lemon juice, salt and pepper in a bowl.  Serve the fried chicken with the dipping sauce.  

Fried Spring Chicken with a Spicy Twist

Ingredients:

3 tablespoons olive oil, divided 1 large red onion, diced 1 red bell pepper, diced 1 green bell pepper, diced 1 tablespoon Cajun seasoning Kosher salt and freshly ground black pepper 3 cloves garlic, minced 3 cups low-sodium chicken broth 2 tablespoons tomato paste 1 cup white wine 2 bay leaves 4 sprigs thyme 1 (5-pound) fresh or frozen whole chicken, thawed if frozen 8 ounces andouille sausage, cut into 1-inch pieces 4 cups cooked white rice, for serving Fresh parsley leaves, for serving

Instructions:

In a large pot or Dutch oven over medium heat, heat 1 tablespoon of the oil until hot. Add the onion, bell peppers, Cajun seasoning, 1 teaspoon salt, and black pepper to taste. Cook until the vegetables are soft, about 5 minutes. Add the garlic and cook for 1 minute longer. Pour in the chicken broth and tomato paste and scrape up any browned bits from the bottom of the pot with a wooden spoon. Stir in the wine and bring to a simmer. Tie the bay leaves and thyme together with kitchen twine and add to the pot. Season the chicken all over with salt and pepper. Add to the pot and bring to a simmer. Cover partially and simmer gently until the chicken is cooked through, about 30 minutes. Remove the chicken from the pot to a cutting board and let cool slightly before carving into 8 pieces. Discard the skin and bones. Return the chicken meat to the pot. Stir in the andouille sausage and cook until heated through, about 5 minutes. Serve over cooked rice, garnished with parsley if desired.

Ingredients:

-4-6 boneless, skinless chicken breasts

-1 cups all-purpose flour -1 tsp. paprika -1/2 tsp. garlic powder -1/4 tsp. salt -1/4 tsp. black pepper -1/2 cup hot sauce (like Frank's Red Hot) -1/2 cup butter, melted - 1 Tbsp. chopped fresh parsley leaves Instructions:

  1. Preheat your slow cooker on high heat setting. Combine the flour, paprika, garlic powder, salt and pepper in a large ziplock bag. Add the chicken breasts and coat them evenly with the flour mixture. Shake off any excess.

  2. In a small bowl, mix together the hot sauce and melted butter. Pour this mixture over the chicken breasts in the ziplock bag and seal the bag closed. Let the chicken sit in the sauce for about 15 minutes or so.

  3. Carefully place the chicken breasts in the preheated slow cooker and cook them on low heat for 4 hours or on high heat for 2 hours, until cooked through completely and no longer pink in the center.

  4. Once cooked, use tongs to remove the chicken from the slow cooker and transfer to a large serving platter or dish. Serve with additional hot sauce on the side, if desired, and garnish with fresh parsley leaves before serving your delicious fried chicken!
